Fettucine alle Gambe Secche

Ingredients for 4 people:

  • 250 grams of fettuccine
  • 20 g mushrooms marasmius MERLINI,
  • 100 g tomatoes,
  • 150 grams of eggplant,
  • 50 g fresh cheese,
  • 3 basil leaves,
  • a clove of garlic,
  • 50 g of olive oil,
  • 20 g of pecorino cheese,
  • chili pepper,
  • salt and pepper.

Preparation:

Clean any impurities from the mushroom marasmius MERLINI and put them to soak in water and milk for 20 min. In a skillet, brown the minced garlic with the oil, the eggplant and the diced tomatoes. Add mushrooms marasmius squeezed, add the chilli pepper, salt, pepper and add the basil leaves and cook for 4-5 min. Cook the fettuccine in salted water. When cooked, cooked with mushrooms, cheese and add the grated pecorino.
